OK, so here is week two of low carb for us. We ar loving it - dh and I have both lost weight and feel really good! I miss good bread with dinner (like ciabatta or french loaf) but that's about all I miss. Mealplanning is actually easier b/c I'm not trying to come up with a clever startchy side.
sun: chicken saltibocca, zucchini skillet
mon: salmon stuffed portabellos, tossed salad
tues: chicken milanese over spinach and arugula salad, roasted broccoli
wed: southwest grilled chicken salad
thurs: fish cakes, sauteed green beans with tomato and pecans
fri: stuffed turkey burgers, mediterranean vegetable salad
