Menu of the Week: August 4
This week my goal is to double up on at least three of my meals and freeze half of each one, in preparation for my new baby. I don't want to have to worry about feeding the rest of my family those first couple of weeks. It's definitely a bit hot here for such warm, hearty meals, but hey - we have air conditioning and I need to plan ahead so it is what it is.
Tonight (Monday) - White Chicken Chili
Tuesday - Eggplant Parmesan
Wednesday - Shepard's Pie
Thursday - Grilled Shrimp and Salad (gotta go light after all those heavy meals)
Friday - Pizza
What's cooking at your house this week?

you menu sounds great! I kinda fell off of our low-carb plan for a week or so, and it's time to get back to our good routine!! Here is our week:
M: shrimp and veggie stir fry
T: chicken and summer vegetable tostadas (I have low carb tortillas for dh and I just put my chicken mixture on a bed of lettuce)
W: grilled steak and vegetables
Th: grilled chicken and chopped salad
F: lettuce wraps and potstickers

We don't plan, or my mom doesn't plan... I don't know how she does it but she always cooks something different and good, so let's see if I remember what we had in the past few days...
Saturday:
Lunch
-Sardines, red peppers, salad
Dinner
-Grilled cuttlefish with potato
Sunday:
Lunch
-Shrimp rice
Dinner
-Gazpacho (cold summer soup)
-Tuna omelette and salad
Monday (today):
Lunch
-Grilled chicken, salad, french fries
Dinner
-Vegetable soup
-Grilled gilthead and salad
I think that's what we had, I thought I wouldn't remember what I ate... I don't know what we're having tomorrow, but I'm making lunch so I'll think of something...

Hey C  , actually I came back to Spain in March, after a 6-month internship in Berlin, it was a horrible experience by the way, I must say I really disliked Berlin.
After that, I looked for a job in Germany but didn't find anything for me, so I decided to study a Master's degree in Madrid, it will take two years, which means I will be in Spain for a good while, I'll try to get a semester abroad though...
So until the end of September I'll be home with my family, well, I was in Tunisia one week, my bf visited me here one week (and met my family!) and in the beginning of September I'll be visiting him in Germany again... In October I'll be back in Madrid!

I have totally not been meal planning like I should. I'm cooking daily, just not planning. Hopefully you guys can get me to get my butt in gear!!

We're having Steaks on the grill, homemade wheat pasta (rec. follows), and a huge salad. I would like to make my own dressing. Does anyone have any good ones?

I saw a recipe on Diners, Drive-Ins, and Dives the other night that I've been wanting to try. You slice tomatoes and onions in half (about 3 tom. to 1 onion) and put them in a pan over indirect heat on the grill so they smoke, for about an hour. Remove the skins, put them in a food processor with salt, pepper and mayo. And that's your dressing.

I am totally meal planning next week. Tonight, we had:
Cameron: Cheerios
Noah and I: Bacon, Egg, and Cheese Sandwiches
B: A gyro
This is SO not the way to feed a family. Stay tuned for my menu for the week of Aug 11!

We love that show tooooooooo!! They filmed a little diner about 15 minutes north of us. We just drove past it last night and said we should eat there.
