Menu of the Week: August 11

M: shrimp and scallop toss over sauteed vegetables

T: Chicken with broccoli and mushroom stir-fry

W: Pork tenderloin with asparagus and sugar snap peas

Th: tuna and white bean salad

F: falafel chicken and cucumber salad

M- Beef Stir Fry, Rice, Broccoli, Pears

T- Garlicky Chicken, Peas, Buttered Pasta

W- Mom and Dad's

T- Kielbasa w/ rice

F- Caramelized Onion and Gorgonzola Pizza

Pizza Recipe
* Olive Oil
* 2 large Vidalia onions, thinly sliced
* 2 teaspoons sugar
* 1 pizza dough
* 1 pound Gorgonzola cheese, crumbled


DIRECTIONS

1. Saute onions in oil until the onions are soft and dark brown, approximately 25 minutes. Stir in sugar, and continue cooking for 1 or 2 more minutes.
2. Preheat oven to 425 degrees F (220 degrees C).
3. Press dough on baking stone to desired thickness. Spread onions evenly over the dough, and top with crumbled Gorgonzola.
4. Bake for 10 to 12 minutes, or until done.

DH and I are going food shopping this evening so we are going to have to plan on the run! I'll post back if we come up with anything good. lol

M: flank steak rolled with spinach and mozzarella

T: eggplant parmesan (didn't end up making it last week), salad

W: chicken sausage with angel hair pasta, salad

TH: grilled steak, corn on the cob, salad

F: pizza, salad

*hopefully I can stick to making the salad every night with our meal

We actually just started this this week. It's going really well. We eat our salads first, while nothing else is on the table and then have our meal. I think it's helping me to eat less.

This week we had...

Monday
Lunch: caneloni (filled with bolognesa)
Dinner: grilled fish (gilthead) and a salad

Tuesday
Lunch: I think we had leftovers
Dinner: grilled fish (perch) with cooked potato

Wednesday
Lunch: chicken and spinach (I prepared it with chorizo)
Dinner: a kind of spanish pie, made of tuna fish, tomato and onion and a salad

Thursday
Lunch: pork knuckle and green beans
Dinner: my mom still didn't go shopping but I think we'll have hake

Friday
Lunch: we're having veal schnitzel, salad and french fries (or freedom fries)
Dinner: no clue

I don't know about the rest of the week... oh and I've noticed this is a wonderful way of exercising my memory lol

lol Maria on the memory thing - that's a plus!

I've done great on my plan this week - it's been out of order, but we've followed it 100%. Tonight I'm going to probably make the eggplant parm and tomorrow night it's sausage and pasta. Jax will be with my parents so I'll have more time to cook AND relax and not worry about what he eats.

On Friday we had perch and mussels for dinner, with rice, salad...

Saturday
Lunch: salt codfish with potatoes, we spent the day in Portugal and had lunch there...
Dinner: I was too full, I just ate watermelon and a peach

Sunday
Lunch: we're having grilled fish (red snapper), black-eyed-peas salad
Dinner: mmm something light, either a salad or an omelette or a soup...

I know I eat a lot of fish but I hadn't realised I eat so much, this menu thing helps to check that kind of things. I have to look up the names of the fish kinds in English though hehe...
