Oh and you like the I Can't Believe Its Not Butter? I didn't, so I switched to Land O Lakes baking butter made with canola oil. If you don't like the ICBINB, try that stuff, its soooo good. It takes a few minutes out of the frig to soften so its perfect for baking too.

oops, sorry for the late reply but YES, the Cazaraba (or whatever it's called) squash was very similar to a butternut.....and I am using "Smart Balance", not "ICBINB".  It's very good.
I've officially moved on to phase 2. I am so happy to be eating fruit again, but I am sticking to grapefruit, granny smith apples, strawberries, blueberries and cantaloupe. Last night I made chocolate covered strawberries for dessert.  I used the semi-sweet baking bars and melted it with some FF cream. It was delish.
Over the weekend I made "portabella pizzas".....basically you cover the portabella top in oil and fresh garlic, put a slice of grilled tomato, mozzerella and fresh basil, sprinkled with oregano. Bake for about 3 minutes until cheese melts at 450. They were GREAT!!

Well, I am really not following the South Beach Diet plan anymore, but after reading the book I have definitely made a change in my eating habits that will most likely be a permanent change. Just a healthier way of eating I guess. Less sugar and carbs, more fresh vegetables, salads and good proteins.
My latest menu:
Monday: turkey burritos w/ whole wheat tortillas
Tuesday: chicken en papillote
Wednesday: portabella pizzas (recipe in above post), salad
Thursday: tomato soup and grilled cheese
Friday: grilled tilapia, salad, garlicky broccoli
Saturday: chicken and veggie stirfry (if we don't go out)
Sunday: cobb salad

Your menu looks great too! I still want to do the porto pizza's, maybe I'll do them for lunch since T won't touch shrooms.
Did you try the chicken en papillote, I kept passing it up, afraid it would be bland. Did you try it? If so what did you think?

Thanks Mel, I was looking for this thread and couldn't find it.
I have a question... C, since you bought the book, do you think it's needed to do this diet? I want to buy it to get ALL the info. so I was just curious what you thought. Another friend of mine told me I didn't need to b/c she gave me the details.
Fruit is one of my fav things, but I really want to get all those bad sugars etc out of my system so I can start eating right... do you think it helped you with that? Any other SB dieters can answer too.
Last one, over all, do you think this is a hard diet to stick too? I think my Bud lights are gonna be hard to give up as well...

M, definitely SKIP the chicken en papillote. It was horribly bland. I even added garlic to the chicken before cooking it, but it really was not good.  Also, the mushrooms are definitely better for lunch. I ended up making J a grilled cheese sandwich after dinner last night.  Tonight I'm making turkey sausage since he's been eating grilled cheese almost every day. lol
Neneuu, I really do think the book is necessary. It really helps you understand and get a grasp on the whole concept of the diet and WHY you should follow the basic philosophy. The first few days of Phase 1 were hard b/c I really love fruit too (and bread). However, it gets easier right away and once the two weeks are over, you can go back to eating fruit and slowly add in different carbs. It would definitely be hard to stick to Phase 1 for more than the two weeks but Phase 2 and especially Phase 3 are easy enough to change into a lifestyle, IMO. You might even change your mind about beer once you read the book. If not, I think that anything in moderation is ok.

Thanks for the info. I saw the book on sale at Sam's for $14.95, so I think I'll go get it. Change my mind about beer? Is this book a magic worker??
