Chicken and Noodles with Peanut Sauce
5 oz. uncooked japanese curly noodles (chucka soba) I couldn't find them in my regular grocery, so I just use regular spagetti noodles
1/2 cup fat free chicken broth
1/3 cup hoisin sauce
1/4 cup creamy peanut butter
2 TBS rice vinegar
2 TBS ketchup
1/4 tsp crushed red pepper
2 tsp dark sesame oil, divided
1 LB chicken breast tenders
1 1/2 cups red bell pepper strips
1 TBS bottled ground fresh ginger couldn't find this either so I just bought some fresh ginger in the produce section
1 tsp minced garlic
1/2 cup chopped green onions

cook noodles according to package directions, drain.
combine broth and next 5 ingredients in a bowl; stir well with a whisk.
Heat 1 tsp oil in a large nonstick skillet over medium high heat. Add the chicken and saute 4 minutes. Add bell pepper; saute 3 minutes. Remove from heat. Combine chicken mixture and noodles in a large bowl.
Heat 1 tsp oil in pan over medium heat. Add ginger and garlic; cook 15 seconds. Stir in broth mixture; cook 30 seconds stiring constantly. Add the broth mixture and 1/4 cup green onions to the noodle mix; toss well. Sprinkle with 1/4 cup green onions.
I serve with:
Asian Slaw
Combine 1 TBS sugar, 3 TBS rice vinegar, 1 TBS low sodium soy sauce and 2 tsp dark sesamie oil. Pour dressing over 4 cups of cabbage and carrot coleslaw; toss to coat.

Re: A long time with no plan........
Well, last week got totally screwed up, we ate out a few times and I forgot a couple ingredients so this week is repeats:
Tonight: We'll be running around so most likely we'll order in or pick something up
Saturday is our big date: Out to dinner for us, but I'm making a pork roast, mashed taters, and steamed broccoli for the kids and my mother
Sunday: Grilled chicken marinated in MOJO with black beans and rice and a salad (since I didn't get to make it last week)
Monday: Chicken teriyaki burgers, with grilled pineapple and red onions, garlic fries, grilled zucchini and mushrooms
Tuesday: Chicken francais served with pasta, sauteed spinach and a salad
Wednesday: Orange mandarin chicken with fried rice, sichuan green beans, and a salad
Thursday: Tangy flank steak with grilled baby bliss taters, and grilled corn on the cob

Here's our week (I included yesterday - sunday)
Sunday: Grilled Chicken, Asparagus with browned balsamic butter, Tuscan Tomato salad, rolls
Monday: Chicken Arugula Focaccia Sandwiches, Spicy French Potatoes
Tuesday: Beef and Summer Squash Stir Fry, Basamati Rice, Aisan Slaw
Wednesday: Mediterranean Chicken, Salad, Rolls
Thursday: Turkey Taco Salads, Pinto Beans with jalepenos
Friday: Out!
Saturday Steaks, bakes and salad

Well, I will be borrowing ideas from the two of you to meal plan for this week. It has been so long that I don't even remember the last time I did it. I have to go food shopping today and I'd like to have a plan for the week so I'm gonna work on it....

This week is going to be alternating days of chicken and turkey. I am having a hard time coming up with side dishes though.....
M: grilled turkey sausages with grilled onions, salad, bread
T: chicken enchiladas, green vegetable
W: turkey chili with rice, green vegetable
TH: chicken marsala, D's tuscan tomato salad
F, Sa or Sun: cilantro turkey burgers, fries, salad

Hey C, if you're looking for side dishes/veggies, I make this a lot - one of David's faves:
Green Bean and Garbanzo Salad
4 cups fresh green beans, cut into bite sized pieces
3/4 cup canned, rinsed garbanzo beans (chick peas)
1 large tomato, diced
2 TBS olive oil
2 TBS red wine vinegar
1 clove minced garlic
1/2 tsp paprika
1/2 tsp sugar
1 tsp low sodium soy sauce
1/2 tsp dijon mustard
2 TBS fat free chicken broth
black pepper to taste
Steam the green beans for about 10 minutes (crisp and still bright green). Rinse with cool water.
While the green beans are steaming, whisk together olive oil, vinegar, paprika, sugar, soy and broth. Mix in garlic and mustard.
Toss the green beans, garbanzos and tomatos, then toss with the marinade, adding black pepper to taste.
Marinate at least one hour prior to serving.
Another...
You could omit the ham and add a veggie (shrooms?)
Lumberjack Hash
2 tsp vegtable oil
2 tsp butter
1 cup chopped onion
1 cup chopped green pepper
2 garlic cloves, minced
8 cups frozen shredded hash brown potatoes, thawed (about 1 pound)
1/2 tsp salt
1/2 tsp black pepper
4 oz 33% less sodium ham, diced
3/4 cup reduced fat shredded chedddar cheese

Heat oil and butter in a large non stick skillet. Add onion and cook for 5 minutes. Add bell pepper and garlic - cook for 3 min. Add potatoes, salt, pepper, ham; cook 16 minutes or until potatoes are golden brown, stirring occaisonally. top with cheese; cook 2 min or unil cheese melts.

Tues----meatloaf, mashed potatos, baked beans
Wed-----M's Lemon garlic roasted chicken and potatos, pasta salad
Thurs----Grand Motts applesauce pork tenderloin, fried potatos, green beans
Fri--probably take out

I've been so bad this week,  I haven't made the teriyaki burgers or Mojo chicken yet on my menu  Sunday we made chicken ceasar wraps instead, they were sooooo good, but fattening. D, I used the Cardini's caesar, that stuff is so awesome!  I all I wanted last night was leftover grilled chicken so I could make more wraps!  So next week when you see repeats you'll know why!

LMAO, M! I gave Jason a choice (aren't I nice?)  since I just went food shopping and had all the meat defrosted so it didn't matter what I made. We ended up havng turkey chili with rice and a salad. It was delicious!! Tonight is going to be chicken marsala with tomato/basil risoto and steamed broccoli.

I haven't planned out my week in soooo long. That's probably why I've put on 5 lbs! M, I wanted to tell you that I made those Junior Mint Brownies you posted on the last planning thread. (I think it was you.) Anyway, they were awesome! I'm not normally too into sweets but I love Junior Mints so I decided to give them a try and I definitely would recommend them. Plus they were only 1.5 fat grams a serving!
