Summer Meals

Anyone still doing their meal plan thing over the summer? Do you change your style of eating b/c of the weather? I just can't get into the mood to cook or go food shopping AT ALL. We've been either scrounging whatever is in the house, going out to eat or ordering in. I guess I shouldn't complain, but I feel like I should be cooking more b/c it's healthier and probably less expensive. What are some of your favorite easy and light summer meals? I need some motivation.

LOL - salads!

Just light sandwiches and salads is all about all I'll make lately. I do sometimes make burgers or hotdogs, and Tuesday we even had filet mignon (special occasion and all) - but its mainly salads or fend for yourself which means sandwich

Easy Chicken Enchilada's

Here is an easy, quick recipe that is yummy

1 large can canned chunk chicken (or I also use the new grilled chicken that is pre cooked and comes in a bag) - drained

1 can rotel - drained
1 can cream of chicken soup
1/4 C sour cream
4 C shredded cheese
1 can green enchilada sauce
1 pkg tortillas

Mix chicken, rotel, soup, sour cream, and 2 C. cheese together

spoon above mixture into torillas and place in a casserole dish or I use a cake pan

Bake at 350 for 20 mins
Remove and cover with enchilada sauce and remaining 2C of cheese - Bake 10 mins or until cheese has melted

Very easy and not a mess to cook. You can also use a can of rotel in place of the enchilada sauce for topping.

Hope you enjoy, all my friends and family love this - even the picky eaters!

I am hoping someone has some summer ideas. It is too HOT to cook right now but we still need to eat Plus not out every night

I really just like eating a lot of salads over the summer and fresh fruit. Also anything grilled is great for me....especially b/c DH cooks it.

In Summer we eat lighter meals at home, we eat a lot of fruit, we eat more salads and less cooked vegetables. We almost don't eat beans or such things. But in general we eat exactly as much fish and meat as in Winter.
