Entertaining

We are having a group of friends over this weekend to play Taboo. I just got it in the mail as a gift from my bro and we haven't tried it yet, but figured it would be fun to have some friends over, get a little drunk and play. I don't want to make a whole sit-down dinner type thing, just put out enough food to make everyone happy. Any ideas on what to put out? I am looking for semi easy-to-make (yet filling) appetizer type foods and drinks since this is a last minute kinda thing.

tortilla pinwheels, quesadilla, homemade pizza slices (store bought crust and a bunch of different, interesting toppings), bruchetta, hummus, sausage balls (the sausage, cheese and bisquick kind - way easy!), 7 layer mexican dip, pasta salad...

Here is my tentative menu...I am making everything, except my friend Sandi is going to make the mini turkey franks in blankets with pilsbury crescent roll. I am asking another 2 friends to bring dessert and another to bring a bottle of vodka. There will be 10 of us.

spinach artichoke dip
roasted garlic bean dip
brushetta
hummous
raw vegetables for dipping
toasted pita chips
tortilla chips
crusty french bread slices
homemade pizzas
fruit/cheese plate
mini quiches
pigs in a blanket
chicken strips

Thanks Roo! Sure, you are welcome to come.....I think we might have too much food so a couple of extra mouths would be great. I am thinking of nixing the chicken strips. I wanted to try this Planet Hollywood recipe from Copykatz but maybe I will just do that for dinner one night for me and J. I think between all that cooking and cleaning up my house in 2 days is enough to keep me busy.

Spinach Balls

Recipe By :
Serving Size : 0 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 pkgs frozen spinach -- (10 ounces each)
thawed, drained well.
2 cups packaged stuffing (small pieces) *My
friend used Pepperidge Farm Herm
Seasoning
1 cup parmesan cheese
6 eggs beaten
3/4 cup soft butter
Salt and pepper to taste

Combine all ingredients, mixing well. Roll into balls (or patties) the size of walnuts. Freeze.Before serving, place on cookie sheets, still frozen. Bake 10-12 minutes at 350F.

TUSCAN CREAM CHEESE SPREAD

Amount Measure Ingredient -- Preparation Method

2 pkgs. cream cheese -- (8 oz.) softened
2 t. chopped fresh garlic
1 t. salt
1 14 oz. artichokes -- drained and chopped
1/3 c. chopped black olives
8 scallions -- chopped
3 oz. sun-dried tomatoes -- softened and chopped
1/2 c. fresh chopped parsley
1 T. fresh chopped chives

In a bowl, mix the cream cheese, garlic and salt. Stir in and blend well the artichokes and olives. Add the scallions, tomatoes, parsley and chives, gently mix together and put into a pretty crock. Serve with Honey Wheat Wheatable Crackers

Margarita Dessert Dip

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 C. sour cream
8 oz. mascarpone cheese
1/2 C. granulated sugar
1/3 C. margarita mix
1 T. lime zest
2 T. tequila
1 T. grand marnier
1 C. whipping cream

In an electric mixing bowl, combine the sour cream, mascarpone cheese, sugar, Lone Star Grill Margarita Mix, lime zest, tequila and grand marnier. Beat until smooth. Whip cream and fold into sour cream mixture. Place in serving bowl. Garnish with additional lime zest. Serve with cinnamon tortilla crisps.

Cinnamon Tortilla Crisps

2 T. granulated sugar
1 t. ground cinnamon
8 (8-inch) flour tortillas
6 T. butter, melted

In a small bowl combine sugar and cinnamon, set aside. Brush tortillas with melted butter. Cut each into 8 wedges. Arrange in single layer on baking sheet. Lightly sprinkle cinnamon mixture over. Bake in preheated 400ºF oven for 4-6 minutes. Can be made ahead and keep in air tight container.
