Picky eaters

Ok ladies.. I am gonna put you all to work. every week grams trys to make a list for dinner for the week and we tend to eat the following all the time:

Chicken
pork chops
tacos
spaghetti
lasanga
hot dogs
hamburgers
corn
rice
green beans
And breakfast food.

Helps us find something new to eat! Grams and I don't really care. But the other 5 people are so picky. It gets hard to go shopping and we always eat the same thing and its getting old. I started eating dinner across the street and John's (best friend)house.

hmmm well I see one major thing that is missing! STEAKS! YUMMY! You could do potatoes like baked, loaded, brocoli and cheese, meatloaf, macroni and cheese, taco pie, (not really anything like a regular taco but very good), tattertot casserol, chicken cordonblue, enchalidas, burritos, loaded nachos with chicken or hamburger. Ok try some of these! Hope is helps! I like all of the pamper chef recipes also. Go check out or buy a Betty Croker cook book. It has so many ideas!

hmmm I need a spell checker! I know half of the stuff I wrote is spelled wrong! but you know what I am talking about!

I like this online cook book - www.allrecipes.com. They have some really good ones and also ways to add flare to the menu you already have.

With the cold weather coming up, try Beef Stew! It's a hit around my house... they have a good recipe (several actually) on that site!

What kind of meats does your family all agree on? Ground beef, roasts, chops, steaks, chicken breasts, whole chicken?

What kinds of veggies does everyone like? If you give me an idea maybe I can hunt out a few recipes for you.

Everyone is so picky... Like I think we all eat chicken. Except my uncles girl won't eat it if its on the bone, even if ya take it off.

We eat tacos.

Pork loin.. We do eat that some.

Veggies? Whats that? All they eat is corn and green beans.

Tigger, I think if you and your G-ma like veggies they don't make them anyway. If they don't care for the veggies, they don't have to eat them. Why deprive yourselves? T and Nick only eat corn, lettuce, peppers, and that is it. So I make veggies for me and the girls and they have salad that night.

As for other dinner issues, looks like you like a lot of ground beef kind of dishes, why not change up taco night with sloppy joe sandwiches, or these:

BBQ Beef Cups

1/2 pound ground beef
1/3 cup bottled barbecue sauce
1 tablespoon brown sugar
2 teaspoons dried minced onion
1 10 oz to 120z refrigerated biscuits (10 biscuits)
1/2 cup shredded cheddar cheese

In a medium skillet, cook ground beef until brown. Drain off fat. Stir bbq sauce, brown sugar, and minced onion into the ground beef in the skillet.

Preheat oven to 400 degrees. Press one biscuit into the bottom and up the sides of a 2 1/2 inch muffin cup; repeat with remaining biscuits to make 10 cups total. Spoon ground beef mixture into biscuit lined cups. Sprinkle with cheese. Bake in the preheated oven about 12 minutes or until biscuits edges are golden brown. Loosen and carefully remove from muffin cups.

Chicken cutlets are really easy to do too, buy either the thin cuts or buy regular breasts, slice them in half longwise and pound them thin with a mallet or cast iron skillet, or even a rolling pin, dip in flour, egg, then breadcrumbs and fry them in oil. After they are done you can put sauce on top of them, mozz cheese on top of that and put them under the broiler till it melts, boom chicken parm.

How about a roast?


Eye Round of Roast with Golden Mushroom Gravy

1 eye of the round roast -- (6 lb.)
2 cans Campbell's Soup Golden Mushroom
1 pkg. Lipton Onion Soup Mix
olive oil
3 garlic cloves -- mashed (3 to 4)
salt and pepper

Rub roast with oil, make a mash with the garlic and salt and pepper, rub all over and insert in roast by making slits and inserting the garlic in. Heat 2 Tbsp. olive oil in a Dutch oven, place roast in and brown on all sides. When all browned, place roast in the middle of a large piece of heavy aluminum foil. Empty mushroom soup over roast, sprinkle the onion soup over this. Seal the foil securely, place entire package onto a 9x13-inch baking pan and bake 350F for 3 hours. When you open the foil, the gravy is done and the meat is so very tender, slicing it is "like buttah".

For a change of regular green beans:

Southern Green Beans

1 lb. fresh green beans -- ends snapped off
2 large onion slices -- chopped
1 garlic clove
2 bacon strips
2 T. veg. oil
pepper
salt
1 drops hot sauce -- (1 to 2)
splash of red wine vinegar or balsamic
vinegar

Cook bacon pieces with onion in a med. pot. After 3 min. add the oil and stir. Add seasonings and garlic clove. Add vinegar and beans, stir to coat. Cover and lower heat to med-low. Check after 5 min., stir, and lower heat to low. Cook for about 25 min or tender. You should have a delicious brown sauce coating the beans when they are ready.


Rigatoni Casserole

1 pkg. rigatoni pasta -- (10 oz.)
1 lb. ground beef or Italian sausage
1 pkg. Armour Pepperoni Sticks -- cubed
1 lb. fresh mushrooms -- coarsely chopped
1 jar pasta sauce
1 can black olives -- coarsely chopped
1 onion -- chopped fine
1 pkg. cheddar cheese -- (8 oz.) shredded
1 pkg. mozzarella cheese -- (8 oz.) shredded
1 cup Parmesan cheese
2 garlic cloves -- minced

Cook pasta in boiling water 6 minutes (don;t over cook or will turn mushy during the baking time); drain.

Fry ground beef or sausage; drain. Add onions and mushrooms to pan and fry until they are soft. Add garlic and fry 1 minute longer.

Mix all ingredients together, except 1/2 cup of the parmesan. Put in lightly greased baking pan, sprinkle with the remaining 1/2 cup parmesan. Cover and bake at 350 degrees for 20 minutes; uncover and bake 30 minutes longer.

(if you don't like mushrooms or olives omit them)

SESAME CHICKEN STRIPS

1/2 cup mayonnaise
1 tsp. dried minced onion
1 tsp. dry mustard
1/2 cup crushed butter-flavor crackers
1/4 cup sesame seeds
1 pound boneless -- skinless chicken
breasts
SAUCE:
1/2 cup mayonnaise
2 tbsp. honey
1 tbsp. prepared mustard .


1. In a bowl, combine 1/2 cup mayonnaise, onion and 1 tsp. mustard. In another bowl, combine crackers and sesame seeds. 2. Cut chicken lengthwise into 1/4-inch strips. Dip strips into mayonaise mixture, then into the cracker mixture. Place a single layer on a large greased baking sheet. Bake at 425º for 15 to 18 minutes or until juices run clear. 3. Combine sauce ingredients and serve with chicken strips. Yield: 5 to 6 appetizer servings. . Steph's Country Kitchen Goodness

Baked Ravioli

25 ounces ravioli -- cooked and drained
1/2 cup melted butter
1 cup seasoned dry bread crumbs
1/2 cup Parmesan cheese -- grated
1/4 teaspoon pepper
3 tablespoons fresh parsley -- chopped
marinara sauce

Preheat oven to 400 degrees. Toss ravioli in melted butter in a 13x9 inch baking dish sprayed with Pam. Mix bread crumbs, cheese, and pepper. Toss with ravioli and sprinkle top with parsley.

Bake uncovered for 15 minutes or until ravioli is hot and golden brown.

Serve with warm marinara sauce.


Dorito's Chicken Casserole


1 whole chicken (about 3 1/2 pounds)
1 pk Doritos (nacho flavor)
1 can whole kernel corn -- drained
2 cups cheddar cheese grated (or any of your
choice)
1 small onion diced
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup milk
1 can Ro-tel tomatoes

Boil the chicken and debone when cool. In a large casserole dish layer chicken, Doritos, cheese, onion, and corn. Mix the soups, milk, and tomatoes together in a seperate bowl. Pour over casserole. Top with cheese and bake in a preheated 375 degree oven for 30 minutes.



If you like ham, toss in some ham and you have a whole meal!

Down Home Macaroni and Cheese

1/4 cup butter or margarine -- divided
1/4 cup flour
1 tsp salt
2 cups milk
1/4 lb Velveeta (4 oz cut-up)
1 pkg shredded cheddar cheese (8 oz) divided
2 cups elbow macaroni (8 oz) cooked and drained
2 tbsp seasoned dry bread crumbs

Melt 3 tblsp of the butter over low heat. Blend in flour and salt, cook for 1 minute to get rid of raw flour taste, but do not brown. Slowly add milk to avoid lumps, stir constantly until thickened. Add Velveeta and 1 1/2 cups of shredded cheddar, stir until melted. Stir in macaroni. Pour into 1 1/2 quart casserole. Melt remaining 1 tblsp of butter, mix with bread crumbs. Sprinkle casserole with 1/2 cup cheese and bread crumb mixture. Bake at 350 degrees for 20 minutes.

Slow Cooker Chicken and Dumplings

4 skinless boneless chicken breasts
2 tblsp butter or margarine
2 cream of chicken soup -- (10.75 ounce can)
1 small onion -- diced
water to cover
2 cans refrigerator biscuits -- (8 count)

Place chicken in a slow cooker, add butter/margarine, soup, onion, and fill with water to cover. Cover slow cooker and cook on low 5 to 6 hours, or until chicken is cooked through. Approximately 30 minutes before serving, tear biscuits into seperate pieces and place in mixture. The biscuits will turn into the dumplings. Test readiness by cutting one in half, if the center is cooked they are ready to eat.

I have used 99% fat free soup and omitted the butter and it turned out great. I also only use one can of biscuits and cut them in thirds.
