Tigger, I think if you and your G-ma like veggies they don't make them anyway. If they don't care for the veggies, they don't have to eat them. Why deprive yourselves? T and Nick only eat corn, lettuce, peppers, and that is it. So I make veggies for me and the girls and they have salad that night.
As for other dinner issues, looks like you like a lot of ground beef kind of dishes, why not change up taco night with sloppy joe sandwiches, or these:
BBQ Beef Cups
1/2 pound ground beef
1/3 cup bottled barbecue sauce
1 tablespoon brown sugar
2 teaspoons dried minced onion
1 10 oz to 120z refrigerated biscuits (10 biscuits)
1/2 cup shredded cheddar cheese
In a medium skillet, cook ground beef until brown. Drain off fat. Stir bbq sauce, brown sugar, and minced onion into the ground beef in the skillet.
Preheat oven to 400 degrees. Press one biscuit into the bottom and up the sides of a 2 1/2 inch muffin cup; repeat with remaining biscuits to make 10 cups total. Spoon ground beef mixture into biscuit lined cups. Sprinkle with cheese. Bake in the preheated oven about 12 minutes or until biscuits edges are golden brown. Loosen and carefully remove from muffin cups.
Chicken cutlets are really easy to do too, buy either the thin cuts or buy regular breasts, slice them in half longwise and pound them thin with a mallet or cast iron skillet, or even a rolling pin, dip in flour, egg, then breadcrumbs and fry them in oil. After they are done you can put sauce on top of them, mozz cheese on top of that and put them under the broiler till it melts, boom chicken parm.
How about a roast?
Eye Round of Roast with Golden Mushroom Gravy
1 eye of the round roast -- (6 lb.)
2 cans Campbell's Soup Golden Mushroom
1 pkg. Lipton Onion Soup Mix
olive oil
3 garlic cloves -- mashed (3 to 4)
salt and pepper
Rub roast with oil, make a mash with the garlic and salt and pepper, rub all over and insert in roast by making slits and inserting the garlic in. Heat 2 Tbsp. olive oil in a Dutch oven, place roast in and brown on all sides. When all browned, place roast in the middle of a large piece of heavy aluminum foil. Empty mushroom soup over roast, sprinkle the onion soup over this. Seal the foil securely, place entire package onto a 9x13-inch baking pan and bake 350F for 3 hours. When you open the foil, the gravy is done and the meat is so very tender, slicing it is "like buttah".
For a change of regular green beans:
Southern Green Beans
1 lb. fresh green beans -- ends snapped off
2 large onion slices -- chopped
1 garlic clove
2 bacon strips
2 T. veg. oil
pepper
salt
1 drops hot sauce -- (1 to 2)
splash of red wine vinegar or balsamic
vinegar
Cook bacon pieces with onion in a med. pot. After 3 min. add the oil and stir. Add seasonings and garlic clove. Add vinegar and beans, stir to coat. Cover and lower heat to med-low. Check after 5 min., stir, and lower heat to low. Cook for about 25 min or tender. You should have a delicious brown sauce coating the beans when they are ready.
Rigatoni Casserole
1 pkg. rigatoni pasta -- (10 oz.)
1 lb. ground beef or Italian sausage
1 pkg. Armour Pepperoni Sticks -- cubed
1 lb. fresh mushrooms -- coarsely chopped
1 jar pasta sauce
1 can black olives -- coarsely chopped
1 onion -- chopped fine
1 pkg. cheddar cheese -- (8 oz.) shredded
1 pkg. mozzarella cheese -- (8 oz.) shredded
1 cup Parmesan cheese
2 garlic cloves -- minced
Cook pasta in boiling water 6 minutes (don;t over cook or will turn mushy during the baking time); drain.
Fry ground beef or sausage; drain. Add onions and mushrooms to pan and fry until they are soft. Add garlic and fry 1 minute longer.
Mix all ingredients together, except 1/2 cup of the parmesan. Put in lightly greased baking pan, sprinkle with the remaining 1/2 cup parmesan. Cover and bake at 350 degrees for 20 minutes; uncover and bake 30 minutes longer.
(if you don't like mushrooms or olives omit them)
SESAME CHICKEN STRIPS
1/2 cup mayonnaise
1 tsp. dried minced onion
1 tsp. dry mustard
1/2 cup crushed butter-flavor crackers
1/4 cup sesame seeds
1 pound boneless -- skinless chicken
breasts
SAUCE:
1/2 cup mayonnaise
2 tbsp. honey
1 tbsp. prepared mustard .
1. In a bowl, combine 1/2 cup mayonnaise, onion and 1 tsp. mustard. In another bowl, combine crackers and sesame seeds. 2. Cut chicken lengthwise into 1/4-inch strips. Dip strips into mayonaise mixture, then into the cracker mixture. Place a single layer on a large greased baking sheet. Bake at 425º for 15 to 18 minutes or until juices run clear. 3. Combine sauce ingredients and serve with chicken strips. Yield: 5 to 6 appetizer servings. . Steph's Country Kitchen Goodness
