Brownie Surprise Cupcakes

1 package fudge brownie mix -- (21 oz.)
15 miniature-size chocolate-coated -- or 15 dark chocolate-covered mint creams
caramel-topped nougat bars with peanuts
Canned vanilla frosting
1 Small multicolored decorative candies
(optional)



1. Preheat the oven to 350 degree F. Line fifteen 2-1/2-inch muffin cups with paper bake cups. Prepare the fudge brownie mix according to package directions. Spoon 1 tablespoon of the batter into each paper bake cup. Place a miniature-size candy bar or mint cream in each cup. Divide the remaining batter among the cups.
2. Bake in the preheated oven for 22 minutes. Let cool in pans on a wire rack. Cupcakes may dip slightly in center. Frost with vanilla frosting and, if desired, sprinkle with decorative candies. Makes 15 cupcakes.
Test Kitchen Tip: If all of the cupcakes do not fit in the oven at one time, refrigerate the unbaked extras until the first ones finish baking.

Lemon Crisp Cookies

1 package (18.25 ounce) lemon cake mix
1 cup crisp Rice Krispies cereal
1 teaspoon grated lemon peel
1/2 cup butter, melted
1 egg, beaten

Preheat oven to 350 degrees.


In a large bowl combine the cake mix, Rice Krispies and grated lemon peel. Add the butter and egg and mix well. The dough will be crumbly.

Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheets. Bake at 350 degrees for 10-12 minutes or until set. Allow cookies to cool on cookie sheets for 5 minutes. Use a spatula to remove cookies from cookie sheets and place on wire racks to cool completely.

Yield: 3 1/2 dozen cookies

Fudgy No Bake Cookies

1 1/2 cups sugar
1/3 cup cocoa
1/2 cup milk
1 stick butter or margarine -- (1/2 cup)
1 teaspoon vanilla extract
2 1/2 to 3 cups quick cooking oats
1/2 cup peanut butter

Mix sugar, cocoa, milk and butter in a large saucepan. Bring to a boil over medium heat while stirring. Boil for 1 to 1 1/2 minutes (don't start timing until it comes to a full boil).

Remove from heat and add oatmeal, vanilla, and peanut butter.

Drop by tablespoonfuls onto wax paper (I use a cookie scoop). Let set until hardened.

Can store at room temp. or in the fridge.

NO KIDDING!! And its ALREADY starting! I lose all self control, its pathetic. I am not allowing myself to cook any of this stuff til the last minute. Or else it's sweets round the clock. And I am not even considering the egg nog (which I have discovered that I LOVE). I try to mix part lite egg nog with part vanilla soy milk *(much to corey's bemusement), but I am tellin ya there is nothing like a rum-filled glass of the real thing. Sigh. Oink oink.

Anyone have a good (and possibly reduced fat) recipe for frosting for holiday sugar cookies? Looking for the creamy kind - not the kind that looks like thin glaze.

I know! But with all the gourmet stuff you put together mine would pale in comparison!!

I went and registered yesterday, so come April I hope to baking a lot more with my new dishes and one of these days I can upgrade recipes!!

Well my mom and I did a bunch of Holiday cookie baking before X-MAS, from choco choco chip to oatmeal to snickerdoodles to these chocolate cookies with icing and a kiss on top....they were pretty good.
For New Years I made the Chocolate dream pie good stuff.

Does anyone have a recipe for a good apple crumb pie?
