What's cookin' this holiday?

So what is everyone baking or cooking for the holiday season? I'm making a batch up of chocolate chip cookies tonight for T to cheer him up, he's a little down about being away from us so much.

Any good cookie recipes to swap? Any special dinners for the holidays?

Funny you should mention the buckeyes, I'm doing them for the first time this year. I'm also going to do sugar cookies with the girlies, fudgy coconut macaroons, oatmeal toffee cookies with cranberries, white chocolate pretzel rings sprinkled with red & green sprinkles, and what ever else catches my fancy! I am doing little cookie tins for the family and a cookie platter for when people drop by Xmas. I love baking cookies, especially since Rayanne gets so excited about it.

I don't know what cookies I will make at my mom's cookie bake this year. Haven't made nay myself before.....

I did however make my mom's chex mix good stuff.

Oatmeal Toffee Cookies w/Dried Cherries
Very rich and very good! Be sure to read my notes at the bottom if you make these.

List of Ingredients
TORIE'S OATMEAL-TOFFEE COOKIES

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup unsalted butter -- (2 sticks) room temperature
3/4 cup granulated sugar
3/4 cup light brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups oatmeal
1 cup dried cherries or cranberries
1 cup bittersweet chocolate (4 1/2 ounces) -- coarsely chopped
1 cup toffee pieces (5 1/2 ounces)



Recipe
1. Heat oven to 350 degrees. Sift together the flour and baking soda, and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugars on medium-high speed until light and fluffy, about 2 to 3 minutes. Scrape down the sides of the bowl once or twice during mixing. Add the egg, and mix on high speed to combine. Add vanilla extract; mix to combine. Scrape down the sides of the bowl.

2. Add the sifted flour a bit at a time on low speed until well combined. Add the oatmeal, cherries, chocolate, and toffee pieces; mix on low speed to combine.

3. Divide the dough into three equal portions, and roll into logs using plastic wrap, approximately 1 1/2 inches in diameter. Chill. To bake, cut logs into 3/4-inch pieces. Bake on parchment-lined baking sheets, until golden brown, 8 to 10 minutes. Remove from the oven, and transfer to a baking rack to cool.

Yield:
"2 dozen"

NOTES : "Martha Stewart always thought it would be difficult to improve on her own oatmeal cookie recipe, until she tasted Torie Hallock’s exquisite cookies filled with toffee pieces, chocolate chunks, and dried cherries. An outstanding baker and cook, Torie lives in rural Maine. She always uses the finest and most delicious ingredients in her cooking. Torie’s oatmeal-cookie dough can be baked immediately, refrigerated for one to two days, or frozen for up to a month."

Posters Notes: I used quick oats because that's what I had on hand, I used Ghiradelli double chocolate chips, I used salted butter, the brown sugar didn't say packed but I did pack it, and I used almond brickle chips. I think I may have gotten a little more than 2 doz. Don't crowd these on the cookie sheet because they spread. I cooled them on the cookie sheets 2 or 3 minutes before removing to a cooling rack. I had to bake these about 12 minutes or so. I don't have a paddle attachment to my mixer. I stirred the last three ingredients into the batter.
The cherries were very hard to find for me (and expensive!). I might try dried cranberries next time.

Oh, I love to make holiday cookies! I will be making decorated sugar cookies, our family favorite - soda craker cookies, and I found several recipes for truffles that I want to try.
I don't know if this was invented in my family or not (my mom claims that is was ) but here's the best, easiest cookie that tastes like Christmas to me:

Soda Cracker Cookies

40 soda crackers (saltines)

1 cup packed brown sugar

1 cup butter (don't use margarine)

1 pakaged chocolate chips


Heat oven to 350. Grease a 9x13 cookie sheet or jelly roll pan (make sure the cookie sheet has a "lip" all the way around). Place the soda crackers on the pan in rows.
Melt the butter in a saucepan. Add the brown sugar and stir until blended. Pour the brown sugar/butter mixture over the crackers (use a fork or spoon to even out any "floating" crackers).
Put in the oven for 10 minutes. Remove from oven and sprinkle the choc. chips over. Place back in oven for additional 5 min to let the chips melt. Remove from oven, spread out the chips and let cool *completely* (I put in fridge for about 30 minutes). Cut into 2x2 inch squares. Eat every single one of them . They are especially good with coffee for breakfast, lunch and dinner.

*Sugar cookies
*Brown Sugar Chocolate Fudge (from this month's Bon Appetit...looks sooo good!!)
*Truffles (D--I'll post my port truffles if you want! And I have a mint/white chocolate one I've never made, but always wanted to!)
*No Bakes
*Dipped Pretzels
*Mexican Wedding Cookies (little walnut butter cookie bites rolled in powdered sugar...which I add my special blend of spices to the sugar!)


That's it for tonight...I'm sure I'll come up with more!!

Well I'm loading up on stuff to take to the inlaws.... Here's my thinking on the subject thus far:

*Mini cheesecakes (made in a muffin tin). Would like to try eggnog or candycane variety and maybe a batch of lower sugar ones for the diabetics in the fam (type 1 is rampant in Core's family).
*Chestnuts (Choc dipped Peanut butter balls)
*Peanut Butter cookies (just got the neatest, yummiest recipe from a friend. NO FLOUR! Just 1 cup lite bp, 1/2 C sugar and 1 egg. SOOO good!)
*Those squares listed by Deana! We call them "Skor Bar Squares". Mmmm mmmm. But soooo not for the diabetics in the family.
*If I have time I would love to do a batch of fancy sugar cookies all decorated up... but dunno if that's gonna work. Those puppies are time consuming.
*I'm also gonna score some of Mom's cranberry coffee loaf and some of her fruit cake. Also will filch some of her fudge-- she makes choco and brown sugar. I cannot make fudge to save my life. Its either too soft or "break-your-teeth" hard. Not sure what her secret is. What's yours Kim? A good heavy pot? How long do you let it boil? How do you judge the softball stage? A thermometer?

Anyone have any "I can't believe there is no sugar in these" recipes?

I haven't a clue how I make it work, Meliz!! I'll type the recipes up I've used with success for you...But I think usually it's just a fluke! I don't have a candy thermometor, so I don't use the temp method...just the length of time it boils is usually my indicator!

And I know I have a few diabetic cookbooks around...it runs in my family too...so I try to use some lower sugar recipes once in a while...and I believe one of my candy making books has a section on sugar free...will post for you when I find them.

Yum, adding these to the list, eggnog is T's fave.....

Eggnog Cookies

3/4 cup butter
1/2 cup sugar
1/4 cup brown sugar
1 egg
1/2 teaspoon vanilla
1/4 teaspoon salt
2 cups flour
Filling:
1/4 cup butter
1 cup confectioners sugar
1 1/2 teaspoons rum extract

Preheat oven to 350 degrees F. Cream together softened butter and sugars. Beat in egg and vanilla. Stir in salt and flour. Roll dough into 1" balls, if dough is hard to handle chill for 1/2 hour. Place onto ungreased cookie sheet 2" apart. Press down centers with thumb. Bake at 350 degrees for 12 minutes or until bottoms are golden. Remove from cookie sheet and cool completely.


For filling, cream together softened butter and confectioners sugar. Stir in rum. Spoon 1/2 tsp. onto each cookie. Sprinkle with nutmeg. If filling is too loose, chill for 15 minutes before spooning onto cookies.

Ive never been a big baker !! But I think Id love to do some before the season is over - we arent going all out with presents this year, so I think it would be nice to do some baking and give as gifts. Any easy recipes for a beginner!?

I did make a red velvet cake yesterday that is the extent of my baking!! It was good though!!

I am so ready to sit down and chow on cookies!!! I'm really not so into Christmas this year, I want to be, but I'm not. So I will just have to enjoy everyone elses recipes.

Incredible awesome peanut butter cookies

Recipe By :
Serving Size : 0 Preparation Time :0:00
Categories :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup peanut butter
1 cup sugar
1 large egg
1 teaspoon baking soda

Combine all the ingredients in a mixing bowl. Spoon out in little balls, about tsp size, flatten with the back of a fork. Bake at 350 degrees for about 9 to 10 minutes, watch them, all ovens are different, when they are lightly browned they are done!
